Buttery Charcuterie Panini

Serves: 2-4

Ingredients:

  • 8 slices sourdough bread, sliced ½-inch thick
  • 4-5 tbsp local unsalted butter, softened
  • 2 tbsp Dijon mustard
  • 340 g sliced charcuterie meats, such as salami, prosciutto, capocollo, or ham
  • ½ cup pickles, dill & sliced
  • 2 cups local smoked gouda, shredded

Directions:

  1. Slice sourdough bread to ½” slices and shred artisan smoked gouda
  2. Spread softened butter on the outside of each sourdough slice. Spread Dijon mustard on the inside of each slice.
  3. Layer the charcuterie meats, sliced pickles, and shredded smoked gouda onto 4 slices of bread. Top with the remaining bread slices, buttered side facing out.
  4. Place the sandwiches in a panini press and cook for 5–10 minutes, or until the bread is golden and the cheese is melted.
  5. If using a skillet, cook the sandwiches over medium heat for 3–4 minutes per side, pressing gently, until golden and melted. Slice in half and serve immediately.
