Ingredients:

  • 1 cup Armstrong Lactose Free Triple Cheddar Shredded Cheese
  • 1 lb (454 g) lean ground beef
  • 1 cup tomato sauce, homemade or store-bought
  • 5 tortillas
  • 3–4 basil leaves, chopped
  • A drizzle of vegetable oil, for cooking

Directions:

  1. Preheat oven to 350°F. Line a baking sheet with parchment paper.
  2. Heat a nonstick skillet over medium-high heat and add a drizzle of vegetable oil. Cook the ground beef until almost fully done. Stir in half of the tomato sauce and half of the shredded cheese.
  3. Finish cooking the beef mixture.
  4. On a work surface, place one tortilla and spread a spoonful of tomato sauce over half of it. Top with the beef mixture and a small handful of shredded cheese. Roll the tortilla up tightly.
  5. Repeat with the remaining tortillas. Place all the roll-ups on the prepared baking sheet, brush with tomato sauce, and sprinkle with more shredded cheese.
  6. Bake for 8–10 minutes, or until the cheese is golden and bubbling. Garnish with chopped basil leaves and enjoy!
