This week’s recipe comes from Monki Bistro! This dish is a play on their already famous/popular MONKI Stuffed French Toast (which explains the reverse French toast name). Since being on the menu in May, it’s become one of their most ordered dishes in store and for delivery! Orders can be made directly through their website.
Strawberry & Banana (Reverse French Toast)
Ingredients:
– 10g butter
– half a banana
– 1/2 tsp lemon juice
– 1 and 1/2 tsp cinnamon, divided
– 50g soft cream cheese
– 1 tsp brown sugar
– 0.5oz of Frangelico
– 6 sliced strawberries
– 1/4 cup of water
– 1 tbsp and 1tsp sugar
– 1/8 cup of orange juice
– 2 eggs
– 1/4 cup of cream/milk
– pinch of salt
– pinch of nutmeg
-1 tbsp oil
– knob of butter
– 1.5 oz white chocolate syrup
– nutella drizzle
Directions
1.Frangelico & Banana Cream Cheese Stuffing: Sautee half a banana in butter until soft. Add lemon juice & 1/2 teaspoon of cinnamon. Mix in soft cream cheese, brown sugar, Frangelico, and mix until well combined
2. Strawberry Compote: In a saucepan over medium heat, add strawberries to water & tablespoon of sugar. Slowly cook down for about 4-7 minutes or until syrupy consistency. Take off the heat, and Orange Juice and stir well
3. Egg Wash: Crack eggs into a bowl, add 1 tsp cinnamon, milk, 1 tsp of sugar, pinch of salt and nutmeg and whisk well
4. Between two thick slices of brioche bread spread a good heaping amount of the cream cheese mixture
5. Spread a nice layer of the strawberry compote on top of the cream cheese
6. In a pan on medium-high heat, put a tablespoon of neutral oil & a knob of butter
7. Dip the assembled French toast into the egg wash for 10-20 seconds or until the bread has soaked enough of the egg wash
8. Place into Frying Pan and cook on all sides until the internal part of the French toast is warmed
9. Place into a skillet and put into an oven at 300 degrees for 5 minutes
10. Take out from oven and pour 1.5oz of White chocolate on top, then drizzle nutella chocolate on top to be designed with skewer art afterwards
