Recipe for Turkey Chow Mein-Style Noodles

Turkey Chow Mein-Style Noodles with stir-fried veggies

Ingredients:

  • 250g ground turkey
  • 1 tbsp ginger
  • 2 green onion
  • 1 tbsp sesame oil
  • ½ tbsp soy sauce
  • 200g chow mein noodles
  • 56g green cabbage, shredded
  • 2 tbsp sweet chili sauce
  • ¼ cup vegetarian oyster sauce
  • 1 carrot

Directions:

1. Bring a large pot of salted water to a boil. Meanwhile, thinly slice green onions, keeping white and green parts separate. Peel, then cut the carrot diagonally into 1/4-inch rounds. In a small bowl, combine soy sauce, sweet chili sauce, vegetarian oyster sauce, half the sesame oil and 1/4 cup water.

2. In a large non-stick pan, heat 2 tsp oil and remaining sesame oil over medium-high heat. When the pan is hot, add turkey, green onion whites and ginger. Cook for 4-5 min, breaking up the turkey into smaller pieces, until no pink remains.

3. To the boiling water, add noodles. Cook for 1-3 min, stirring occasionally, until tender but still firm to the bite. Drain and rinse noodles with cold water. Leave noodles in the colander to drain.

4. To the pan with turkey, add cabbage and carrots. Cook for 2-4 min, stirring often, until tender-crisp.

5. Reduce heat to medium, then add sauce to the pan with turkey mixture. Bring to a simmer. Once simmering, add noodles. Toss for 1 min, until noodles are warmed through and coated in sauce.
