Gooey Smoked Gouda Stuffed Chicken

Serves 4-6

Ingredients:

  • 4 large chicken breasts
  • 1 1/2 cups smoked gouda, shredded
  • 1 cup local 35% whipping cream
  • 3 tbsp local butter
  • 1 1/2 tsp salt, divided
  • 2 tsp pepper, divided
  • 4 cups mushrooms, sliced
  • 1/4 cup balsamic glaze
  • 3 tbsp parsley, chopped

Directions:

  1. Preheat the oven to 375°F.
  2. Butterfly the chicken breasts and lay them between two pieces of parchment paper. Using a tenderizer or rolling pin, flatten the chicken to about ¼-inch thickness.
  3. Divide the shredded smoked gouda between the chicken breasts. Roll each chicken breast around the cheese and place seam side down in a baking dish.
  4. Pour the cream over the chicken and season with 1 tsp salt and 1 tsp pepper. Bake for 25–30 minutes, or until the chicken reaches an internal temperature of 165°F.
  5. While the chicken bakes, melt the butter in a large skillet over medium heat. Add the mushrooms and season with the remaining salt and pepper. Sauté until the mushrooms are golden brown.
  6. Add the balsamic glaze to the skillet and stir until the mushrooms are lightly coated and the sauce is warmed through.
  7. Spoon the balsamic mushrooms over the baked stuffed chicken. Garnish with chopped parsley and serve warm.
