Recipe for Gluten Free Cheese Bagels from Miss P’s Gluten Free Bakery

Gen Boudreau, Owner of Miss P’s Gluten Free Bakery along with Head Baker, Nikki Balatan shared with us this Gluten Free Cheese Bagels recipe. Their Gluten Free Cheddar Bagels are the #1 hit within the bakery and are often sold out by the end of each week. Each Bagel is a 4-inch round smothered with cheddar cheese at only 80 grams per bagel. This bagel is very versatile as you can eat it plain, place any spread or use it as a hamburger bun!

Recipe for Gluten Free Cheese Bagels

Gluten Free Cheese Bagels

Serves 6 Bagels

Ingredients:

  • 2 1/2 cup (350g) Gluten Free Bread Flour
  • 3/4 cup (100g) Shredded Cheddar Cheese
  • 5 tsp (23.5g) Vegetable Oil
  • 1 cup (270g) Water
  • 11.2g Yeast
  • 3 g Salt
  • 7.5g Apple Cider Vinegar

Directions:

1. Preheat the oven to 350 degrees C

2. In a mixer bowl, pour in water and add in the yeast.

3. Add in vegetable oil, and apple cider vinegar.

4. In a separate bowl, mix together salt and the gluten free bread flour.

5. Add dry ingredients into the wet ingredients, and mix dough at low speed until incorporated for at least 2 minutes.

6. Mix further at the second speed for another 2 minutes.

7. When dough is ready, divide into 100g balls, and mix together with 20g cheddar cheese each ball.

8. Roll the dough into 6-inch logs and connect ends to make a ring and place in a sheet pan.

9. Spray water on the bagels before proofing for an hour and bake in the preheated oven for 20 to 25 minutes or until golden brown.
