These Gut-Friendly Dark Chocolate Pecan Cookies from Professor Tim Spector are a ZOE community favourite—perfect as a wholesome alternative to ultra-processed snacks. They are quick to make, require minimal ingredients, and are packed with fibre and healthy fats.
Gut-Friendly Dark Chocolate Pecan Cookies
Makes 12 cookies
Ingredients:
- 2 tbsp ground flaxseed meal
- 3 tbsp light brown sugar
- ¼ cup extra-virgin olive oil
- 1⅔ cups / 200g almond meal or almond flour
- Scant ½ cup / 50g chopped pecans (you can substitute with pumpkin or sunflower seeds)
- 2¾ oz / 80g dark chocolate (at least 70% cocoa solids), coarsely chopped
- Pinch of salt
Instructions:
- Preheat the oven to 350°F / 180°C and line a baking sheet with parchment paper.
- In a mixing bowl, combine the flaxseed meal, brown sugar, and olive oil. Mix well.
- Add the almond meal, chopped pecans, dark chocolate, and a pinch of salt. Stir until fully combined.
- Scoop tablespoon-sized portions of dough onto the prepared baking sheet and flatten slightly.
- Bake for 10–12 minutes, or until the edges are golden.
- Let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
