Gut-Friendly Dark Chocolate Pecan Cookies

Makes 12 cookies

Ingredients:

  • 2 tbsp ground flaxseed meal
  • 3 tbsp light brown sugar
  • ¼ cup extra-virgin olive oil
  • 1⅔ cups / 200g almond meal or almond flour
  • Scant ½ cup / 50g chopped pecans (you can substitute with pumpkin or sunflower seeds)
  • 2¾ oz / 80g dark chocolate (at least 70% cocoa solids), coarsely chopped
  • Pinch of salt

Instructions:

  1. Preheat the oven to 350°F / 180°C and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine the flaxseed meal, brown sugar, and olive oil. Mix well.
  3. Add the almond meal, chopped pecans, dark chocolate, and a pinch of salt. Stir until fully combined.
  4. Scoop tablespoon-sized portions of dough onto the prepared baking sheet and flatten slightly.
  5. Bake for 10–12 minutes, or until the edges are golden.
  6. Let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
