This new season of Come Dine With Me Canada celebrates big personalities, and few are bigger than publicist and performer Kojenwa Moitt, the self-described “Oprah meets Howard Stern” who loves taking center stage. Her Thai Seafood Medley channels her old-world Italian taste with French technique and Caribbean flair, resulting in a deeply aromatic, showstopping bowl that mirrors her love of holding court. Bold, elegant, and layered, it’s the kind of dish that keeps guests talking.

Thai Seafood Medley
Ingredients:
- Coconut oil or vegetable oil to start (2 tbsp)
- Salt
- 4 large garlic cloves
- Coconut milk
- Lemongrass
- Lime leaf
- Cauliflower
- 2 portobello mushrooms
- Whole onion
- Red pepper
- Cilantro
- Seafood mix (has mussels, calamari, octopus, shrimp)
- Optional: add lobster meat, pound of mussels, chunks of fresh salmon as you wish for your medley!
- Rice noodles
- Blue Dragon Red Curry paste
- 2 cups of fish sauce
Directions:
- Grill & Roast the Vegetables: Chop the cauliflower into chunks and grill for about 6 minutes. Julienne the red peppers and roast for about 6 minutes. Set aside.
- Make the Shrimp Shell Broth: Place the shrimp shells (and mussel shells, if using) into a heat-safe bowl. Pour boiling water over the shells and let steep. Add fish sauce to the broth and set aside.
- Prepare the Main Soup: In a medium pot, heat a little oil over medium heat. Sauté the onions until soft. Add the grilled cauliflower and roasted red peppers. Pour in the Thai soup stock and let everything simmer so the vegetables continue to soften. Add the coconut milk and stir. Add the lime leaves, lemongrass, and salt to taste.
- Add the Seafood: Add the shrimp, mussels, salmon, lobster, and calamari to the pot. Reduce heat and let the soup simmer for about 60 minutes. Add sage and any additional herbs you’re using. Simmer for another 20 minutes. Stir in fresh cilantro.
- Cook the Rice Noodles: In a separate pot, bring water to a boil. Add 1 pack of rice noodles and cook according to package instructions. Drain and set aside.
- Serve: Ladle the soup over bowls of rice noodles. Garnish with fresh cilantro and enjoy!
