Transform the bones and carcass into a flavourful Turkey Stock that can be frozen and used for a month, providing the perfect base for soups and other dishes.
Turkey Stock
Serves: 6
Prep Time: 5 mins
Cook Time: 2 hrs
Ingredients:
- 1 turkey carcass, most of the meat removed
- 6 litres water
- 2 onions, quartered
- 3 large carrots, cut into 4 pieces
- 3 ribs of celery, halved lengthwise
- 1 tablespoon Italian seasoning
- 2 bay leaves
- 1 tablespoon minced garlic or 2 garlic cloves
Directions:
- Place all of the ingredients in a large soup or stock pot.
- Bring to a boil over medium-high heat, then reduce heat to medium-low, cover and simmer for as little as 1 hour or up to 4 hours. The longer it simmers, the more flavour it will have.
- Let cool slightly and strain.
- Use immediately to make soup, or store in the refrigerator for several days or freezer up to 3 months
