Recipe for Turkey Stock from Think Turkey

Transform the bones and carcass into a flavourful Turkey Stock that can be frozen and used for a month, providing the perfect base for soups and other dishes.

Recipe for Turkey Stock

Turkey Stock

Serves: 6
Prep Time: 5 mins
Cook Time: 2 hrs

Ingredients:

  • 1 turkey carcass, most of the meat removed
  • 6 litres water
  • 2 onions, quartered
  • 3 large carrots, cut into 4 pieces
  • 3 ribs of celery, halved lengthwise
  • 1 tablespoon Italian seasoning
  • 2 bay leaves
  • 1 tablespoon minced garlic or 2 garlic cloves

Directions:

  1. Place all of the ingredients in a large soup or stock pot.
  2. Bring to a boil over medium-high heat, then reduce heat to medium-low, cover and simmer for as little as 1 hour or up to 4 hours. The longer it simmers, the more flavour it will have.
  3. Let cool slightly and strain.
  4. Use immediately to make soup, or store in the refrigerator for several days or freezer up to 3 months
