Farm Boy shared with us this Turkey & Sausage Gumbo, a hearty, flavour-packed dish that transforms leftover roasted turkey into a comforting, Cajun-inspired meal. Featuring smoky chorizo, tender vegetables, and a rich, chocolatey roux, it’s perfect over fluffy white rice for a satisfying dinner. Slow-simmered with aromatic spices and fresh herbs, every spoonful delivers bold, savoury goodness.

Turkey & Sausage Gumbo

Ingredients:
- 2 Tbsp + ½ tsp Farm Boy™ Vegetable Cooking Oil
- 1 fresh Farm Boy™ Chorizo Artisan Sausage
- 2 Tbsp unsalted butter
- 1/4 cup flour
- 1 small green or red bell pepper diced
- 1 medium yellow onion diced
- 2-3 stalks celery diced
- 1/3 cup parsley chopped
- 1 ½ tsp Farm Boy™ Garlic Flowers
- 1 1/4 Tbsp Farm Boy™ Cajun Spice
- 1 bay leaf
- ½ tsp Farm Boy™ Organic Paprika or to taste
- ½ can Farm Boy™ Italian Tomatoes chopped
- 2 ½ cups leftover roasted turkey roughly shredded
- 2 cups Farm Boy™ Organic Low Sodium Chicken Broth
- salt and pepper to taste
- 3 green onions thinly sliced
- 2-3 cups cooked white rice
Directions:
- In medium Dutch oven, heat ½ tsp Farm Boy™ Vegetable Cooking Oil over medium-high heat and cook chorizo sausage until browned, about 8 minutes.
- Transfer the cooked sausage to a cutting board and cut into ½” slices.
- To Dutch oven, add butter, 2 Tbsp Farm Boy™ Vegetable Cooking Oil, and flour. Cook, over medium-low heat, stirring constantly, until the roux looks like melted milk chocolate, about 10 to 20 minutes.
- Stir in bell pepper, onion, and celery and increase heat to medium-high.
- Cook, stirring frequently, until the onions are soft, about 8 minutes.
- Add the parsley, Farm Boy™ Garlic Flowers, Farm Boy™ Cajun Seasoning, bay leaf, Farm Boy™ Organic Paprika, Farm Boy™ Italian Tomatoes, chorizo sausage, and turkey.
- Cook, stirring, about 2 to 3 minutes.
- Add Farm Boy™ Organic Low Sodium Chicken Broth and bring to a boil, then reduce the heat and simmer, uncovered, until the gumbo is thickened slightly, about 45-60 minutes
- Add salt and pepper to taste.
- Serve in bowls with white rice, garnished with green onions.
