Turkey Kofte with Sumac Onions Recipe
Serves: 6 (Makes 28)

Ingredients:
- 900 g ground turkey
- 1/3 cup grated white or red onion
- 3/4 cup Farm Boy™ Panko Breadcrumbs (227 g)
- 1 1/2 Tbsp Farm Boy™ Sumac Seasoning (60 g)
- 2 tsp Farm Boy™ Organic Paprika (48 g)
- 1 tsp Farm Boy™ Organic Ground Cumin (45 g)
- 1 tsp salt
- 1/2 tsp ground black pepper
- 1 egg
- 1 Tbsp extra virgin olive oil
- 3 Tbsp parsley chopped
Sumac Onions
- 1 cup thinly sliced red onions
- 2 Tbsp chopped parsley
- 2 tsp Farm Boy™ Sumac Seasoning (60 g)
- 2 Tbsp fresh lemon juice
- 1 Tbsp extra virgin olive oil
- 1/2 tsp salt
Toppings
- 4 Lebanese cucumbers
- 2 ripe heirloom tomatoes thinly sliced
- 1 cup Farm Boy™ Organic Plain Yogurt (750 g)
- 1 pack Farm Boy™ Flame Baked Original Naan (each)
Directions:
1. In large bowl, combine ground turkey, grated onion, Farm Boy™ Panko Breadcrumbs, Farm Boy™ Sumac Seasoning, Farm Boy™ Organic Paprika, Farm Boy™ Ground Cumin, salt, pepper, egg, olive oil, and parsley. Mix thoroughly, until mixture is uniform and sticky, about 8 minutes. Alternatively, you can use a hand blender to mix.
2. Portion meat, shaping patties into oblong shapes, about 2” long and 1/2’” thick. Refrigerate while you make the onions and get the grill ready.
3. Preheat grill over medium-high heat.
4. While grill is heating, in medium bowl, combine sliced red onions with parsley, Farm Boy™ Sumac Seasoning, lemon juice, olive oil, and salt. Mix well and reserve.
5. Grease grates and cook patties for 2-3 minutes, then flip them and cook the second side, until internal temperature reaches 160°F. Remove from grill and let them rest for 5 minutes.
6. Serve patties on warm Farm Boy™ Flame Baked Naan bread, topped with sumac onions, cucumbers and tomatoes. Drizzle with yogurt and serve immediately.
Chef’s Tips
- If you don’t have an outdoor grill, cook these on a grill pan or frying pan.
- Serve these kofte with hummus, baba ganouj and/or your favourite bean salad, French fries, or rice.
- The Sumac Onions are great on shawarmas, burgers, sandwiches, and wraps.
- Grill a few mini peppers and tomatoes for a great accompaniment to the kofte.
