Meatballs in Tomato Sauce with Zucchini Noodles

Serves 4

Ingredients:

  • 1/2 Tbsp Farm Boy™ Extra Virgin Olive Oil
  • 500 g Farm Boy™ Sweet Italian Pork Meatballs
  • 1 container Farm Boy™ Sugo Di Pomodoro Tomato Sauce (680 ml)
  • 700 g spiralized zucchini about 8 cups
  • 1/2 tsp salt
  • Parmigiano Reggiano for garnish

Directions:

  1. In large saucepan, heat Farm Boy™ Extra Virgin Olive Oil and cook Farm Boy™ Sweet Italian Meatballs, turning until browned on all sides, about 8 minutes.
  2. Drain fat and add Farm Boy™ Sugo di Pomodoro to pan.
  3. Bring sauce to a low simmer and cover.
  4. Simmer until meatballs are cooked through and reach internal temperature of 160°F.
  5. While sauce is simmering, place spiralized zucchini in colander and toss with salt.
  6. Allow zucchini to sit 10-15 minutes, then rinse.
  7. Serve meatballs and sauce over zucchini.
  8. Garnish with Parmigiano Reggiano and serve.
