Ingredients:
For Salmon Rub
- 1-2lbs fresh salmon
- 2 tsp smoked paprika
- 1 tsp chilli powder
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp salt
- 1/2 tsp freshly cracked pepper
- 2 Tbsp Mazola Corn Oil or olive oil
For Mango Avocado Salsa
- 2 mangoes, diced
- 1 avocado, diced
- 1/4 cup fresh cilantro, diced
- 1/4 cup red onion, diced
- 1/2 jalapeno, diced
- Juice from 2 limes
- Salt to taste
For Hot Honey
- 3 Tbsp honey
- 1/2 tsp chili flakes
- 1/4 tsp garlic powder
- 1/4 tsp paprika
For the rest
- 2-3 Tbsp Mazola Corn Oil, for frying
- 2 cups cooked coconut rice
Directions:
- Start by mixing together all the ingredients for the mango avocado salsa, set aside. Then mix together the salmon rub ingredients and spoon over the salmon.
- Heat Mazola Corn Oil in a pan until shimmering, then carefully fry salmon on both sides until cooked through.
- Assemble the bowl with coconut rice, the perfectly cooked salmon, fresh mango salsa, and hot honey to add a little kick.
