Almond-Crusted Salmon, Mediterranean Vegetable Orzo & Lemon Parmesan Asparagus

Ingredients:

Almond-Crusted Salmon

  • 2 portions (6-8 oz) salmon
  • salt & pepper
  • Farm Boy™ Organic Chili Peppers (23 g) a sprinkle
  • 1 Tbsp Farm Boy™ Dijon Mustard (225 ml)
  • 1 clove garlic minced
  • 1 Tbsp Farm Boy™ Extra Virgin Olive Oil (1 L)
  • 2 tsp Farm Boy™ White Liquid Honey (500 g)
  • 1 Tbsp Farm Boy™ Organic Apple Cider Vinegar (945 ml)
  • 1 fresh lemon juiced
  • 2 Tbsp almonds chopped
  • 1 Tbsp parsley chopped

Parmesan Asparagus

  • 1 bunch asparagus trimmed
  • 2 tsp Farm Boy™ Extra Virgin Olive Oil (1 L)
  • 2 cloves garlic minced
  • 1/2 cup Farm Boy™ Vegan Parmesan-Style Shredded Cheese Alternative (200 g) grated
  • 1/2 lemon
  • salt & pepper

Mediterranean Vegetable Orzo

  • 1 cup cooked orzo
  • 1/2 cucumber halved
  • 1 heaping cup parsley
  • 1/4 cup red onion finely chopped
  • 1/4 cup Farm Boy™ Pickled Roasted Red Peppers (500 ml) chopped
  • 1/4 cup Farm Boy™ Goat Feta Cheese (200 g) crumbled
  • 3 Tbsp Farm Boy™ Extra Virgin Olive Oil (1 L)
  • 2 Tbsp Farm Boy™ Prosecco Wine Vinegar (500 ml)
  • 1 tsp Farm Boy™ White Liquid Honey (500 g)
  • salt & pepper

Directions:

  1. For Almond Crusted Salmon: Preheat the oven to 400°F
  2. Line a baking tray with parchment paper and top with salmon. Season with salt, pepper, and Farm Boy™ Organic Chili Peppers.
  3. In a small bowl, combine Farm Boy™ Dijon Mustard, garlic, Farm Boy™ Extra Virgin Olive Oil, Farm Boy™ White Liquid Honey, Farm Boy™ Organic Apple Cider Vinegar, and lemon juice and pour on top of the salmon. Top with chopped almonds and parsley.
  4. Bake for 15-18 minutes until cooked to your liking.
  5. For Parmesan Asparagus: Preheat the oven to 400°F.
  6. Line a baking tray with parchment paper and place the asparagus on the parchment paper.
  7. Drizzle Farm Boy™ Extra Virgin Olive Oil over asparagus and sprinkle with salt, garlic, parmesan, and salt & pepper. Bake for 12 minutes.
  8. For Mediterranean Vegetable Orzo: In small bowl, whisk together Farm Boy™ Extra Virgin Olive Oil, Farm Boy™ Prosecco Wine Vinegar, and salt and pepper to taste. Set dressing aside.
  9. In large bowl, combine cooked orzo, cucumber, parsley, red onion, chopped Farm Boy™ Pickled Roasted Red Peppers, and crumbled Farm Boy™ Goat Feta Cheese.
  10. Drizzle with dressing and toss to combine.
