Carly Kubinec, chef and founder of Crème Cream Puffs, has brought a fresh take on choux pastry to the city, offering a modern twist on a classic French treat. After training at Le Cordon Bleu in London and working in a Michelin-starred kitchen, Kubinec returned home with a vision: to introduce Calgarians to beautifully crafted, flavour-packed cream puffs unlike anything they’d tasted before.

What is your business called and what does it do?

Crème Cream Puffs – A modern bakery in Calgary, AB, specializing in seasonal cream puffs, cookies, macarons, and cakes.

What made you want to do this work?

After graduating from Le Cordon Bleu Culinary & Pastry School in London, England, I worked in a Michelin-star restaurant and was introduced to the world of fine dining. One of my daily tasks was making cream puffs and gougères.

When I returned home to Calgary, I spent time experimenting in the kitchen, unsure of my next step. I started creating fun and modern cream puff flavours, and after rave reviews—shoutout to our first flavour, Pumpkin Spice!—Crème was born.

What problem did you want to solve with the business?

I wanted to introduce people to a new dessert option. With so many donut and cupcake shops out there, I felt it was time for cream puffs and choux pastry to get the spotlight they deserve.

Who are your clientele/demographics?

Our clientele typically includes middle- to upper-class men and women in the Calgary area.

How does your business make money? How does it work?

We sell cream puffs and other baked goods. Customers can pre-order online for pickup or delivery, or visit our retail location to shop in person.

We’re located near Chinook Mall at Unit 2, 5524 1A Street SW, Calgary, Alberta.

Our cream puffs stand out because they are filled and topped with a variety of handmade pastry creams, mousses, and citrus curds. Everything is made from scratch using the freshest ingredients to create smooth, rich, and flavorful fillings.

What is the best part about what you do? What is the worst part?

The best part is creating beautiful, unique, and delicious desserts that become part of people’s special occasions.
