Apricot Apple Crumble

Ingredients:

Filling

  • 1 cup apricot nectar
  • 1 package (6 ounces) dried apricots, chopped
  • 1/3 cup honey
  • 1/4 cup pure maple syrup
  • 2 teaspoons lemon peel
  • 3 tablespoons flour
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon ground cardamom
  • 8 cups tart apples, sliced

Topping

  • 3/4 cup flour
  • 1/2 cup quick oats (not instant)
  • 1/2 teaspoon ground ginger
  • 1/2 tablespoons ground cinnamon
  • 1/2 cup chopped pecans
  • 1/4 cup Mazola® Corn Oil
  • 1/4 cup pure maple syrup

Directions:

  1. Preheat oven to 350ºF.
  2. Combine apricot nectar, dried apricots, honey, maple syrup, and lemon peel in a medium bowl. Add flour, cinnamon, cloves, nutmeg, ginger, and cardamom.
  3. Place apples in a 13×9-inch baking dish; spoon apricot mixture over apples.

For Topping

  1. Combine all topping ingredients in a medium bowl. Sprinkle over fruit.
  2. Bake 35 to 40 minutes or until topping mixture is golden brown.
  3. Serve with ice cream or whipped topping, if desired. Store leftovers in refrigerator.
