For this week’s recipe, Sebastien and Sheila Centner shared their recipe for Sheila’s Fusilli with Prosciutto and Cherry Tomatoes from their new book, Eatertainment.

Fusilli with Prosciutto and Cherry Tomatoes

Yield: serves 6–8
Prep time: 30 minutes + 2 hours– overnight to marinate
Cook time: 12 minutes

Ingredients:

– 3 pints cherry tomatoes, halved

– 1 Tbsp minced garlic

– 2 lb fusilli

– 1⁄4 cup olive oil

– Sea salt and black pepper

– 101⁄2 oz prosciutto, sliced paper thin

– 1⁄2 cup basil leaves

– 6 oz parmigiano-reggiano

– Chili flakes, for garnish, optional

 

Directions:

In a small bowl, mix the tomatoes with the garlic. Refrigerate for at least 2 hours, or preferably
overnight.

In a large pot, cook the pasta in generously salted water according to the package directions until al dente.

Drain the pasta, transfer to a large bowl, add the oil, and toss to coat completely. Season to taste with salt and pepper.

Divide the pasta among six to eight bowls. Arrange the tomatoes, prosciutto, and basil over top. Using a sharp knife or vegetable peeler, shave some Parmigiano-Reggiano over everything. Sprinkle with chilli flakes (if using) and serve immediately.
